Vanilla Honey Mashed Sweet Potatoes

Here is a delicious recipe for enjoyment. Sweet potatoes are a highly nutritious vegetable that is rich in fiber and the powerful anti-oxidant beta carotene. Sweet potatoes are also a good source of Vitamin C, minerals like copper, manganese, zinc, phosphorus, magnesium, calcium, iron, potassium and B-vitamins like vitamin B-6, folic acid, and Vitamin B-5. This recipe is accompanied by coconut oil for the proper absorption of beta carotene along with some cinnamon and vanilla for added flavor. I know you will love this delicious and nutritious recipe.
Ingredients:
4 large sweet potatoes
2 pinches of sea salt
1/3 cup organic expeller pressed coconut oil
1 tbsp cinnamon
1 tsp of organic vanilla extract
3 tbsp of organic raw honey
1/2 cup purified water (if necessary)
Dried fruit (raisins, dried cranberries, and dried figs) optional

Instructions:
Add purified water to a large pot along with 2 pinches of sea salt. Add 3 large sweet potatoes to the pot and boil for 30 minutes. Strain sweet potatoes from water and let cool for about 30 minutes. Peel skin from sweet potato and place in a large bowl. Mash sweet potatoes with a masher using water if necessary to assist in mashing the potatoes. Then add the coconut oil, vanilla extract, raw honey, cinnamon, and dried fruit to top it off. Enjoy!
